Easy Meal Planning

“What’s for dinner?” The most dreaded question of my day. To be brutally honest I have to tell you that I hate cooking! I have one kid who has food sensitivities and 2 others who are picky, picky, picky. There is no pleasing all 3 of them at once. I’ve tried several different ways of meal planning but I never stick with any of them for long. I need an easy meal plan if it’s going to work for me. 

The meal plan that works best for me and helps me plan out a month at a time is breaking meals down by type. I don’t bother with planning out breakfast and lunch. We always have cereal and sandwich supplies at home for those meals.

Some people like to assign certain nights of the week to certain meals. Like “Meatless Mondays” and “Taco Tuesdays”.  I like to have a little more flexibility so if it’s a night we have a meeting  I can choose a quick meal from the list.  Whatever works best for you! Remember we are all about easy meal planning. 

 


Here’s an example of what I do. I write down all my main dishes under each category and I can easily plan a whole month worth of dinners this way.

Chicken and Rice Soup
Jambalaya
Chili

Pasta 

Spaghetti
Homemade Mac & Cheese
Cajun Mac & Cheese
Pasta Salad

Breakfast

Eggs/Muffins/Fried Potatoes

Sandwiches

Chicken Salad Sandwiches
Tuna Melts
Hot Dogs

Asian

Chicken/Broccoli/Green Pepper Stir fry
Pork Egg Roll Bowls
General Tso’s Chicken (from freezer section)
 

Mexican

Tacos
Enchiladas
Taco Skillet with cabbage
Fajitas
 

Meat and Misc.

Chicken Legs and mashed potatoes
Roast Beef
Pork Roast
Pork Chops
Pizza
Stuffed Potatoes 

Mexican

Tacos
Enchiladas
Taco Skillet with cabbage
Adobe Rabbit
